Chocolate Fix

Thought it was time to share a recipe again.  I seem to find something I like, usually some form of chocolate, and make it over and over again till everyone is sick of it and this is my latest.  This recipe is from Nigella Express.  I am a bit of a Nigella fanatic but I’ll save that for another post!  Think S’mores in a bar form.  Yum Yum!

Rocky Road Crunch Bars
1 stick plus 1 tablespoon soft unsalted butter
10 ounces semisweet chocolate broken into pieces (I just use chocolate chips)
1/4 cup corn syrup
8 ounces plain hard and crunchy cookies (I use Nilla Wafers)
2 cups mini marshmallows
powdered sugar for dusting
Melt the butter, chocolate and syrup in a heavy based saucepan.  Scoop out 1/2 cup of the melted mixture and save for later.
Put the cookies in a zip lock bag and bash them with a rolling pin.  Looking for both crumbs and chunks (not too many crumbs though).
Fold the cookie pieces in the chocolate mixture and then mix in the marshmallows.
Pour into a 9 inch square foil tray (line with foil).  Flatten the best you can with a spatula.  Pour over the reserved chocolate mixture and smooth over the top.
Refrigerate for at least 2 hours.
Cut into the squares and dust with powdered sugar!

    Oh, thanks for the recipe. I have such a weakness for chocolate!!! This is a must try!

    London Calling – you’ll love the cookbook. I just think Nigella is fabulous in every way. I’ve made several of things from the book and they have not disappointed!
