{Eat} Cookies




Yesterday I made cookies.  It was a perfect pick me up for a Monday.  Baking always makes me happy.
My friend Annabelle made these cookies for me a couple of years ago and I had since lost the recipe.  However, I happily found the recipe a few weeks ago while cleaning out a cabinet.
These oatmeal raisin cookies are not so bad for you {whole wheat flour, egg whites, not a lot of sugar}.  So you should feel not so bad about eating them {at least that is what I tell myself}.  They are really light and yet still soft and gooey and although {usually} I prefer cookies straight out of the oven these are better when they’ve cooled and settled for awhile.  And without further ado . . . 
Not So Bad For You Oatmeal Cookies
Ingredients
  • 1/3 Cups     Canola Oil
  • 1/3 Cups     Brown Sugar
  • 2 Tbsp        Sugar
  • 1 1/2          Egg Whites
  • 3/4 tsp        Vanilla 
  • 3 Tbsp        Water
  • 2 Cups        Rolled Oats
  • 1/3 Cups     Unbleached white flour
  • 1/3 Cups     Whole wheat flour
  • 1/4 tsp        Salt
  • 1/4 tsp        Baking soda
  • 1 tsp          Cinnamon
  • 1/2            Cup Raisins

Directions
  • Heat oven to 325
  • Cream oil & sugars
  • Mix egg whites, vanilla & water
  • Add dry ingredients
  • Don’t over mix & use right away
  • Drop tablespoon fulls onto greased cookie sheet
  • Bake for 10 minutes
  • Cool completely

*today I took about half of the batter and separated it (pre-cinnamon and raisins) and added chocolate chips.  Couldn’t leave mr. chocolate behind.

    Oatmeal raisin are one of my favorites. And as it's Fat Tuesday, it means I get to make and eat whatever I want, right?

    I am going to pull out my good chocolate for this one & make tonight. Baking is a good way to de-stress. Maybe I will share on my blog as well, since it's healthy and all! Yummy!!!
