i had a blog post, almost (on books). and, then school was cancelled, again (brrrr). so, instead of words, i give you a recipe. a recipe for shredded slow cooker beef tacos to be exact. the kind of cooking that is great for slowed down snow days or days so fast you can’t find time to cook.
these are so delicious and so doable, even if you don’t cook. the i ingredients are few and you, likely, have most of the them in your pantry already. the work is a matter of just mixing and pouring.
ingredients:
-1 chuck roast
-1 can of beef broth
-1 lime juiced
-1 1/2 Tbsp chili powder
-1/2 Tbsp cumin
-1/2 Tbsp minced onion
-1 tsp garlic
-1 tsp salt
directions:
-pour liquids over top of roast
-mix dry ingredients, sprinkle on top
-cook all day on low
-1/2 hour before serving, shred beef with fork and continue to cook for another 1/2 hr
serve on warm tortillas with all your fave toppings. and, of course, guacamole (if you need a recipe, gaby is the queen of gauc).

I love that you said these are do-able even if you can’t cook, because, well, I can’t really haha! I have a slow cooker my mom gifted us and have yet to use it although everyone has been telling me how easy it is to prep meals. I’ll have to tuck this recipe away and try it sometime!

This looks really good! I’m going to try it next week. I bet it would be good in a quesadilla too YUM! Here is my favorite crockpot recipe. Use the hoisin sauce! I’ve made it for company too and it’s a huge hit! Serve with mashed potatoes so you can put sauce on them like gravy :) Even better, add some wasabi paste to the potatoes BOMB!

Here is a less fancy but delicious crockpot meal. A couple chicken breasts, 1 jar salsa and 1-2 cans of drained and rinsed black beans. Cook 6-7hrs on low then add a bag of frozen corn (or a can if that’s what you like) and a stick of cream cheese. Mix the melted cream cheese in. You can shred the chicken or make it more chunky. Serve this creamy Mexican flavored delight over rice. Or just eat it in a bowl :)

yum! thanks for sharing! i’m all about less fancy :) and, any crock pot recipe that doesn’t call for a of cream of something….. my hubby would love that mexican dish! thanks for sharing! xo . t
