Raw Chocolate Turtle Recipe

Happy Friday, lovelies!

How about starting the weekend off with a treat? It’s snowing here today…. in April! It happens every year, so I try not to act surprised or super annoyed; instead I’m all about distracting myself with laughter and a sweet treat.

For laughing I’ve been relying on snapchat this week. I said, “I’d never,” but I also said that about Twitter. If you are on snapchat you can find me under username @lalalovelyblog or by Trina McNeilly. It’s a revival of my goofy 11th grade self. I didn’t realize how much I missed her.

Now, for the sweet treats.  A few weeks ago I made some raw chocolate turtles and they were so good.  And truly, you can feel good about eating these sweets.  The best part is that they are so easy to make.

All you need is five ingredients . . .

Now, for the sweet treats. A few weeks ago I made some raw chocolate turtles and they were so good. And truly, you can feel good about eating these sweets. The best part is that they are so easy to make.

All you need is five ingredients . . .

RAW CHOCOLATE TURTLES

Raw cashews
Medjool dates
Good quality, dark chocolate
Vanilla
Pink Himalayan sea salt

 

Line a plate or tray with wax paper.

Make small little piles of raw cashews.

Purée dates with vanilla and a pinch of sea salt (to taste). Spoon date mixture on top of cashews.

Melt chocolate and pour over to cover cashews and dates. Top with a sprinkle of sea salt.

Freeze for at least one hour before serving.

The chocolate can be melted in the microwave (just be sure to metl the chocolate for a shorter amount of time, stirring, and melting again) or on the stovetop (a double boiler always works best).  I like to use Green and Black’s chocolate (it’s my chocolate of choice to keep in the house for when I need a little square of dark chocolate), but you could even use chocolate chips if that is all you had in the house.

I’m looking forward to making these this weekend (and, probably, snapchatting too).

    I just love turtles all different ways!! These look delicious!! Perfect to eat while I watch the snow tomorrow! =P
