Since I started cutting back on the amount of sweets and the type of sweets I eat, I started making these energy bites for a sweet treat for myself and they totally suffice.
I usually make a batch at the beginning of the week. I pretend they will last all week, but usually it’s only a matter of days.
Here is how . . .

Since I started cutting back on the amount of sweets and the type of sweets I eat, I started making these energy bites for a sweet treat for myself and they totally suffice.
I usually make a batch at the beginning of the week. I pretend they will last all week, but usually it’s only a matter of days.
Here is how . . .
All you need is one bowl.
These no bake energy bites are so easy to make, my kids have even started making them on their own.
NO BAKE ENERGY BITES
1 cup dry oatmeal
2/3 cup coconut (toasted if you have the time- I never do)
1/2 cup ground flaxseed (lately I use them whole)
1/4 cup chia seeds
1/2 cup peanut butter (or nut butter of choice)
1/2 cup mini chocolate chips
1/3 cup honey
1 tsp vanilla
Mix all ingredients together in a large bowl.
Roll into balls (I use a cookie scoop to portion first).
Cover and place in fridge to firm up.
Recipe yields approximately two dozen energy bites and lasts for up to a week in an air-tight container.
*Note if the mix seems to dry add a little extra honey or peanut butter.
There are so many variations you can make to this recipe. You could use almond butter. You could add cocoa to make them chocolate flavored. You could add chopped up nuts. And, you could eliminate anything that doesn’t suit you. Sometimes I even leave out the chocolate chips.
I should say I don’t use natural peanut butter for this. I think it might be a little too runny. My favorite brand of peanut butter, at the moment, is Peanut Butter & Co Smooth Operator (the texture is traditional, the flavor is amazing and there are no hydrogenated oils, no trans fats, no high fructose corn syrup, Non-GMO, certified gluten free, vegan, etc. And, it’s priced well). And, I’m loving these mini chips….should you be looking for a healthier option.

One of my biggest problems with my weight loss journey is energy. I will so be trying this and probably will add the cocoa to it!! =) Thank you for the lovely recipe! =)

I make these all the time! But I sub out coconut for a high fiber granola! Love it!
